After craving banana walnut muffins for over a week, our SuperFan Jaclyn decided to create a vegan version of Starbucks banana walnut muffin which uses all animal products in their pastries.
Ingredients
- 1/2 c gluten free flour
- 1/3 tsp baking soda
- 1 banana
- 3 tbsp Vanilla VeganSmart
- 1 tbsp water
- 1/2 tbsp flax seeds
- 1/ 2 tsp vanilla extract
- 2 tbsp coconut oil
- 1 1/2 tbsp peanut butter
Directions
- Blend in food processor then pour batter into muffin tins
- Bake at 350 for 10-12 minutes until fully cooked.
The end result will be soft and delicious.
